Description

  • 1 tablespoon Crisco shortening
  • Decorative sprinkles


Instructions

  1. Prepare Chocolate: Place the finely chopped white chocolate in a medium mixing bowl and set aside.
  2. Heat Cream and Champagne: In a medium saucepan, combine heavy whipping cream and champagne over low-medium heat, stirring occasionally until smooth. Allow the mixture to come to a simmer and remove from heat immediately.
  3. Make Ganache: Pour the hot cream and champagne mixture over the chopped chocolate and stir immediately until the ganache is smooth and silky.
  4. Add Butter: Add the softened butter to the ganache, stirring until fully melted and incorporated. Pour the ganache into a container and refrigerate for 45-60 minutes, not exceeding 1 hour.
  5. Melt Coating Chocolate: Towards the end of the chill time, prepare a double boiler setup with a large bowl over boiling water. Add the white chocolate melting wafers and stir occasionally until almost smooth. Add Crisco shortening and continue stirring until silky smooth, then set aside.
  6. Shape Truffles: Using a 1 inch cookie scoop, scoop the chilled ganache mixture and roll each piece into a smooth ball with your palms. Place each ball on a parchment-lined baking sheet and repeat until all ganache is used.
  7. Dip Truffles: Using dipping tools or two forks, dip each truffle ball into the melted white chocolate coating ensuring even coverage. Place coated truffles back on parchment paper and immediately add decorative sprinkles on top.
  8. Chill and Set: Return the decorated truffles to the refrigerator and chill for an additional 30 minutes before serving.
