Ingredients
Scale
Cherries
- 2 cups (280g) fresh sweet cherries, pitted and halved
- 1 tablespoon (20g) maple syrup
- 1/4 cup (35g) fresh sweet cherries for garnish
Avocado Chocolate Mousse
- 1 (200g) large avocado, peeled and pitted, room temperature
- 1/4 cup (85g) maple syrup
- 1/4 cup (45g) melted dairy-free chocolate or extra 1/3 cup (35g) cocoa powder
- 3 tablespoons (45g) dairy-free milk, room temperature
- 2 1/2 tablespoons (15g) dutch-process cocoa powder
- 1 teaspoon vanilla extract (optional)
- 1 teaspoon espresso powder (optional)
- Pinch of salt (optional)
Other
- ~2 cups dairy-free whipped cream, chilled
- Chocolate shavings or chocolate chips for garnish (optional)
Instructions
- Prepare Cherries: In a bowl, combine 2 cups halved cherries with 1 tablespoon maple syrup. Gently toss and set aside to macerate while preparing the mousse.
- Make Avocado Chocolate Mousse: In a blender or food processor, add the avocado, maple syrup, melted chocolate (or cocoa powder), dairy-free milk, dutch-process cocoa powder, vanilla extract, espresso powder, and a pinch of salt. Blend until smooth and creamy, scraping down the sides as needed.
- Assemble Dessert Cups: In serving glasses or cups, start by spooning a layer of the avocado chocolate mousse. Follow with a layer of macerated cherries, then a generous layer of dairy-free whipped cream. Repeat layers if space allows.
- Garnish and Serve: Top the final whipped cream layer with the fresh sweet cherries and sprinkle with chocolate shavings or chips if desired. Serve immediately or chill in the refrigerator for 15-20 minutes before serving for a firmer texture.
Notes
- Use ripe but firm avocados for the creamiest mousse texture.
- The maple syrup can be adjusted to taste depending on your desired sweetness.
- If melted dairy-free chocolate is not available, increase the cocoa powder as an alternative.
- Dairy-free whipped cream can be store-bought or homemade from coconut cream.
- Optional espresso powder enhances the chocolate flavor but can be omitted for a milder taste.
- Chilling the assembled cups helps thicken the mousse and meld flavors.
- This dessert is naturally vegan, gluten-free, and refined sugar-free.
