Ingredients
Scale
Steak and Seasonings
- 4 pounds sirloin steak or chuck roast, cut into bite-sized cubes
- 1 ½ teaspoons kosher salt, or to taste
- 1 teaspoon black pepper
- 1 ½ teaspoons garlic powder
- 1 teaspoon paprika (not the hot one)
Cooking Ingredients
- 3 tablespoons olive oil, divided
- 1 large sweet onion, thinly sliced
- 1 cup low sodium beef broth
- 1-ounce packet au jus gravy mix
- 6 cloves garlic, pressed
- 5 tablespoons unsalted butter, sliced
- Chopped fresh parsley, for garnish
Instructions
- Prepare the Steak: Season the bite-sized steak cubes evenly with kosher salt, black pepper, garlic powder, and paprika. Toss to coat thoroughly.
- Sear the Steak: Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add the steak cubes in batches and sear them until browned on all sides, about 2-3 minutes per batch. Transfer seared steak to the slow cooker.
- Sauté Onions and Garlic: In the same skillet, add the remaining 1 tablespoon of olive oil. Sauté the thinly sliced sweet onion and pressed garlic cloves until softened and fragrant, about 5 minutes. Transfer onions and garlic to the slow cooker over the steak.
- Add Broth and Gravy Mix: Pour the low sodium beef broth into the slow cooker with the au jus gravy mix. Stir gently to combine the ingredients.
- Cook Low and Slow: Cover the slow cooker and cook on low heat for 7 hours. This slow cooking will tenderize the steak and allow flavors to meld.
- Finish with Butter: After cooking, add the sliced unsalted butter to the slow cooker. Stir gently until the butter melts into the sauce, enriching the dish with a smooth, garlicky finish.
- Garnish and Serve: Sprinkle chopped fresh parsley over the steak bites for a pop of color and fresh flavor. Serve hot over mashed potatoes, noodles, or rice for a comforting meal.
Notes
- For best results, use a well-marbled sirloin or chuck roast for tenderness and flavor.
- To speed up the process, you can use high heat on the slow cooker but flavor and tenderness will be best on low.
- If you prefer a thicker sauce, remove the lid in the last 30 minutes of cooking to reduce liquid.
- Leftovers reheat well and can be stored in an airtight container in the refrigerator for up to 3 days.
- Serve with mashed potatoes, egg noodles, or steamed rice to soak up the delicious garlic butter sauce.
