Ingredients
Scale
Protein and Vegetables
- 2 chicken breasts (cut into small cubes)
- 1 small onion (chopped)
- 4 cloves garlic (minced)
- 2 cups broccoli florets
Pantry Staples
- 1 tablespoon olive oil
- ¾ cup rice (uncooked)
- 1 can (10 ounces) cream of chicken soup
- 2 cups chicken broth (low sodium)
- ¼ teaspoon salt
- ¼ teaspoon black pepper
Dairy and Garnishes
- 1 cup cheddar cheese
- 1 tablespoon fresh parsley (chopped)
Instructions
- Cook the onion and chicken: Heat the olive oil in a large oven-proof skillet over medium heat. Add the chopped onion and cubed chicken. Cook for about 5 minutes until the chicken begins to brown and is no longer pink. Season with salt and pepper. Stir in minced garlic and cook for another 30 seconds until the garlic becomes aromatic.
- Add the rice and liquids: Stir in the uncooked rice, cream of chicken soup, and 2 cups of low sodium chicken broth. If more liquid is necessary, add additional broth to ensure the rice cooks fully.
- Cook the rice: Bring the mixture to a boil, then reduce heat to medium-low. Cover and simmer, stirring occasionally, for about 15 minutes or until the rice is tender and fully cooked. Taste and adjust seasoning as needed.
- Finish with broccoli and cheese: Add the broccoli florets and half of the cheddar cheese to the skillet. Continue cooking for 2 more minutes until the broccoli softens slightly. Sprinkle the remaining cheese on top and place the skillet under the broiler for a couple of minutes until the cheese melts and begins to brown.
- Garnish and serve: Remove from the oven, garnish with chopped fresh parsley, and serve warm.
Notes
- This casserole is made all in one pot, making cleanup quick and easy.
- Use low sodium chicken broth to control salt levels and enhance flavor.
- If you prefer, substitute broccoli with other vegetables like cauliflower or green beans.
- For a creamier texture, add a splash of milk or more cream of chicken soup.
- Be careful with the broiler step; watch closely to prevent burning the cheese.
