Ingredients
Scale
Chicken
- 4 chicken breasts
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1 teaspoon black pepper
Sauce
- 2 jalapenos, diced
- 3 peaches, diced
- 1/4 cup honey
- 1/4 cup apple cider vinegar
- 1/4 cup water
- 1 tablespoon cornstarch
Instructions
- Preheat the Oven: Preheat your oven to 375°F (190°C) to prepare for baking the chicken after searing.
- Season the Chicken: Season the chicken breasts evenly on both sides with salt and black pepper to enhance flavor.
- Sear the Chicken: Heat olive oil in a large oven-safe skillet over medium-high heat. Add the chicken breasts and cook for 3-4 minutes on each side until they develop a golden brown crust.
- Remove Chicken: Take the chicken out of the skillet and set aside temporarily to prepare the sauce.
- Cook Jalapenos and Peaches: In the same skillet, add the diced jalapenos and peaches. Cook them for 2-3 minutes until they become slightly softened and fragrant.
- Prepare Sauce Mixture: In a small bowl, whisk together the honey, apple cider vinegar, water, and cornstarch until the mixture is smooth and ready to be poured.
- Add Sauce to Skillet: Pour the honey sauce over the jalapenos and peaches, stir well, and bring the mixture to a simmer to activate the cornstarch and thicken the sauce.
- Return Chicken to Skillet: Place the seared chicken breasts back into the skillet, spooning some sauce on top to coat the meat for flavor infusion.
- Bake the Chicken: Transfer the skillet to the preheated oven and bake for 25 minutes until the chicken is cooked through and tender.
- Rest and Serve: Remove from the oven and let the chicken rest for a few minutes. Serve hot, spooning the flavorful jalapeno peach sauce over each chicken breast. Enjoy!
Notes
- Use an oven-safe skillet or transfer the sauce and chicken to a baking dish before placing in the oven.
- For less heat, remove seeds from jalapenos before dicing.
- Fresh peaches work best, but canned peaches drained can be substituted.
- If sauce is too thin after baking, remove chicken and simmer sauce on stovetop until thickened.
- Serve with rice or crusty bread to soak up the flavorful sauce.
