Description

Jalapeno Peach Chicken is a flavorful dish combining the heat of diced jalapenos with the sweetness of fresh peaches, cooked to juicy perfection. Searing the chicken breasts before baking in a honey and apple cider vinegar glaze creates a delicious balance of spicy, tangy, and fruity flavors in this easy and vibrant meal.

Ingredients

Scale

Chicken

  • 4 chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper

Sauce

  • 2 jalapenos, diced
  • 3 peaches, diced
  • 1/4 cup honey
  • 1/4 cup apple cider vinegar
  • 1/4 cup water
  • 1 tablespoon cornstarch

Instructions

  1. Preheat the Oven: Preheat your oven to 375°F (190°C) to prepare for baking the chicken after searing.
  2. Season the Chicken: Season the chicken breasts evenly on both sides with salt and black pepper to enhance flavor.
  3. Sear the Chicken: Heat olive oil in a large oven-safe skillet over medium-high heat. Add the chicken breasts and cook for 3-4 minutes on each side until they develop a golden brown crust.
  4. Remove Chicken: Take the chicken out of the skillet and set aside temporarily to prepare the sauce.
  5. Cook Jalapenos and Peaches: In the same skillet, add the diced jalapenos and peaches. Cook them for 2-3 minutes until they become slightly softened and fragrant.
  6. Prepare Sauce Mixture: In a small bowl, whisk together the honey, apple cider vinegar, water, and cornstarch until the mixture is smooth and ready to be poured.
  7. Add Sauce to Skillet: Pour the honey sauce over the jalapenos and peaches, stir well, and bring the mixture to a simmer to activate the cornstarch and thicken the sauce.
  8. Return Chicken to Skillet: Place the seared chicken breasts back into the skillet, spooning some sauce on top to coat the meat for flavor infusion.
  9. Bake the Chicken: Transfer the skillet to the preheated oven and bake for 25 minutes until the chicken is cooked through and tender.
  10. Rest and Serve: Remove from the oven and let the chicken rest for a few minutes. Serve hot, spooning the flavorful jalapeno peach sauce over each chicken breast. Enjoy!

Notes

  • Use an oven-safe skillet or transfer the sauce and chicken to a baking dish before placing in the oven.
  • For less heat, remove seeds from jalapenos before dicing.
  • Fresh peaches work best, but canned peaches drained can be substituted.
  • If sauce is too thin after baking, remove chicken and simmer sauce on stovetop until thickened.
  • Serve with rice or crusty bread to soak up the flavorful sauce.
