These Antipasto Skewers are a vibrant and flavorful appetizer combining salty olives, savory salami, fresh mozzarella, and garden-fresh herbs.   • 8 large green olives
  • 8 Genoa salami slices - halved
  • 8 mini Mozzarella cheese balls
  • 8 large basil leaves
  • 8 grape tomatoes
  • 8 cheese tortellini - cooked and cooled
  • 8 large black olives

Vinaigrette

  • 1/4 cup good vinegar (Champagne, sherry, or balsamic)
  • 2/3 teaspoon salt
  • 1/2 teaspoon Dijon mustard
  • 1/2 clove garlic - finely minced or 2 teaspoons minced shallots
  • 2 teaspoons honey
  • 3/4 cup extra-virgin olive oil
  • 1/4 teaspoon fresh ground pepper
  • 1/2 teaspoon fresh chives - chopped
  • 1/2 teaspoon fresh basil - chopped
  • 1/2 teaspoon fresh parsley - chopped


Instructions

  1. Prepare the vinaigrette: In a small bowl, whisk together vinegar, salt, Dijon mustard, minced garlic or shallots, and honey until combined. Slowly drizzle in the extra-virgin olive oil while whisking continuously to emulsify the dressing. Stir in fresh ground pepper, chopped chives, basil, and parsley to finish the vinaigrette.
  2. Cook and cool tortellini: If not pre-cooked, prepare cheese tortellini according to package instructions. Drain and rinse under cold water to cool, then set aside.
  3. Assemble skewers: Thread one piece of each ingredient onto individual skewers in a repeating pattern: green olive, halved Genoa salami slice, mini mozzarella ball, large basil leaf, grape tomato, cheese tortellini, and black olive.
  4. Toss with vinaigrette: Arrange the skewers on a serving platter and drizzle the prepared vinaigrette generously over them, or serve the vinaigrette on the side for dipping.
  5. Serve and enjoy: These skewers can be made ahead and refrigerated to allow flavors to meld. Bring them to room temperature before serving for best taste and enjoy as a perfect appetizer or light snack.
