Instructions
- Prepare the vegetables: Heat 1 teaspoon of vegetable oil in a large pan over medium heat. Add the broccoli florets and thinly sliced carrots, cooking for approximately 4 minutes or until the vegetables are tender but still crisp.
- Remove and cover vegetables: Take the cooked vegetables out of the pan and place them on a plate. Cover the plate to keep them warm.
- Prepare the pan for chicken: Wipe the pan clean with a paper towel and turn the heat to high. Add the remaining 1 tablespoon of vegetable oil.

- Add garlic: Add the minced garlic to the pan with the chicken and cook for 30 seconds, stirring to release its aroma.
- Return vegetables to pan: Add the cooked broccoli and carrots back into the pan and cook together for 2 more minutes to warm the vegetables through.
- Mix sauce ingredients: In a bowl, whisk together the low sodium chicken broth, honey, and soy sauce until well combined.
- Prepare cornstarch slurry: In a small bowl, mix the cornstarch with 1 tablespoon of cold water to create a slurry.
- Combine sauce and cook: Pour the soy sauce mixture over the chicken and vegetables in the pan. Cook for 30 seconds, then add the cornstarch slurry. Bring the mixture to a boil and cook for an additional 1 minute or until the sauce has thickened to a glaze.
- Serve: Serve the honey garlic chicken stir fry immediately, with steamed rice if desired.
