Ingredients

Units Scale

Vegetables

  • 1 cup thinly sliced peeled carrots
  • 2 cups broccoli florets

Protein

  • 1 lb boneless skinless chicken breasts, cut into 1 inch pieces

Sauce and Seasonings

  • 1 tablespoon + 1 teaspoon vegetable oil (divided use)
  • 4 cloves garlic, minced
  • 1/4 cup low sodium chicken broth (or water)
  • 1/4 cup soy sauce
  • 3 tablespoons honey
  • 2 teaspoons cornstarch
  • Salt and pepper to taste

Instructions

  1. Prepare the vegetables: Heat 1 teaspoon of vegetable oil in a large pan over medium heat. Add the broccoli florets and thinly sliced carrots, cooking for approximately 4 minutes or until the vegetables are tender but still crisp.
  2. Remove and cover vegetables: Take the cooked vegetables out of the pan and place them on a plate. Cover the plate to keep them warm.
  3. Prepare the pan for chicken: Wipe the pan clean with a paper towel and turn the heat to high. Add the remaining 1 tablespoon of vegetable oil.
  4. Cook the chicken: Season the chicken pieces with salt and pepper. Add them to the pan in a single layer; cook for 3-4 minutes on each side until golden brown and cooked through. It may be necessary to cook the chicken in batches to avoid overcrowding.
  5. Add garlic: Add the minced garlic to the pan with the chicken and cook for 30 seconds, stirring to release its aroma.
  6. Return vegetables to pan: Add the cooked broccoli and carrots back into the pan and cook together for 2 more minutes to warm the vegetables through.
  7. Mix sauce ingredients: In a bowl, whisk together the low sodium chicken broth, honey, and soy sauce until well combined.
  8. Prepare cornstarch slurry: In a small bowl, mix the cornstarch with 1 tablespoon of cold water to create a slurry.
  9. Combine sauce and cook: Pour the soy sauce mixture over the chicken and vegetables in the pan. Cook for 30 seconds, then add the cornstarch slurry. Bring the mixture to a boil and cook for an additional 1 minute or until the sauce has thickened to a glaze.
  10. Serve: Serve the honey garlic chicken stir fry immediately, with steamed rice if desired.

Notes

  • You can substitute the chicken with tofu or shrimp for a different protein option.
  • Adjust the amount of honey for a sweeter or less sweet sauce according to your preference.
  • Use low sodium soy sauce to reduce the sodium content of the dish.
  • Ensure the chicken pieces are cut evenly for uniform cooking.
  • For extra crunch, add sliced bell peppers or snap peas along with the broccoli and carrots.
