Description

Delicious and protein-packed Breakfast Egg Bites made with eggs, cheddar cheese, ham, and fresh vegetables baked to golden perfection in a mini muffin pan. Ideal for a quick breakfast or a healthy snack on the go.

Egg Mixture

  • 6 eggs
  • 3 tablespoons milk
  • 3/4 cup grated cheddar cheese
  • 1/4 cup green onion, sliced

Vegetables and Meat

  • 3/4 cup red bell pepper, chopped
  • 1/4 cup red onion, chopped

Instructions

  1. Preheat Oven Preheat your oven to 350 degrees Fahrenheit and generously spray a mini muffin pan with cooking spray to prevent sticking.
  2. Sauté Vegetables and Ham Heat olive oil in a skillet over medium heat. Add diced ham, red bell pepper, and red onion. Sauté for about 5 minutes until the peppers and onions are slightly tender.
  3. Whisk Egg Mixture In a separate large bowl, whisk together the eggs and milk thoroughly until well combined.
  4. Add Cheese and Green Onions Stir in the grated cheddar cheese and sliced green onions into the egg mixture. For a denser texture, use a fork to blend rather than whisking.
  5. Combine Mixtures Add the sautéed ham and vegetable mixture into the egg mixture and stir to evenly distribute.
  6. Fill Muffin Pan Pour the combined mixture evenly into the greased mini muffin pan cups.
  7. Bake Place the muffin pan in the preheated oven and bake for 16 minutes or until the tops are golden brown and eggs are fully cooked.
  8. Cool and Serve Allow the egg bites to cool slightly before removing them from the pan. Serve warm.
