- 6 eggs

- 3/4 cup grated cheddar cheese

Instructions
- Preheat Oven Preheat your oven to 350 degrees Fahrenheit and generously spray a mini muffin pan with cooking spray to prevent sticking.
- Sauté Vegetables and Ham Heat olive oil in a skillet over medium heat. Add diced ham, red bell pepper, and red onion. Sauté for about 5 minutes until the peppers and onions are slightly tender.
- Whisk Egg Mixture In a separate large bowl, whisk together the eggs and milk thoroughly until well combined.
- Add Cheese and Green Onions Stir in the grated cheddar cheese and sliced green onions into the egg mixture. For a denser texture, use a fork to blend rather than whisking.
- Combine Mixtures Add the sautéed ham and vegetable mixture into the egg mixture and stir to evenly distribute.
- Fill Muffin Pan Pour the combined mixture evenly into the greased mini muffin pan cups.
- Bake Place the muffin pan in the preheated oven and bake for 16 minutes or until the tops are golden brown and eggs are fully cooked.
- Cool and Serve Allow the egg bites to cool slightly before removing them from the pan. Serve warm.
