- 1 lemon, juice and zest
- 3 tablespoons honey
- 2 tablespoons olive oil
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper
Grilled Watermelon
- Vegetable oil for grill
- 1 watermelon (5-6 pounds), cut into 1-inch thick wedges
- 1/4 cup crumbled feta
- 1-2 tablespoons small basil leaves, torn
Instructions
- Preheat Grill. Preheat a gas or charcoal grill on high heat and grease the grates with vegetable oil to prevent sticking.
- Make the Glaze. In a small bowl, whisk together the lemon juice and zest, honey, olive oil, kosher salt, and black pepper until well combined.
- Brush Watermelon. Brush both sides of each watermelon wedge generously with the lemon-honey glaze.
- Grill Watermelon. Place the watermelon wedges on the hot grill and cook for about 2 minutes per side, or until grill marks appear and the watermelon is slightly softened.
- Assemble and Serve. Arrange the grilled watermelon wedges on a serving platter, sprinkle with crumbled feta cheese, and garnish with torn basil leaves before serving.
Notes
- Use a ripe, but firm watermelon to ensure it holds its shape on the grill.
- Choose freshly crumbled feta for the best flavor and texture contrast.
- If you don’t have a grill, you can use a grill pan on the stovetop.
- Adjust the honey amount to your preferred level of sweetness.
- Grilling time is short to prevent the watermelon from becoming mushy.
