  • 2 large ripe peaches

  • Roasted pistachios, roughly chopped - 2 tablespoons

Instructions

  1. Prepare the Peaches: Halve and pit the peaches by cutting along the seam from stem to end, then twisting apart the halves. If the pit remains stuck, carefully cut around it with a knife and remove it with a spoon.
  2. Heat the Grill: Preheat a grill or grill pan over medium high heat. While heating, lightly brush the cut side of each peach half with extra virgin olive oil to prevent sticking and enhance caramelization.
  3. Grill the Peaches: Place the peach halves cut side down onto the grill. Cook for 4 to 5 minutes until grill marks form and the fruit softens slightly. Flip the peaches and grill the skin side for another 3 to 4 minutes.
  4. Plate and Serve: Remove the peaches from the grill and let them cool slightly until warm but safe to handle. Arrange on plates, top each with a scoop of vanilla ice cream, drizzle with caramel sauce, then sprinkle with chopped pistachios, minced fresh mint, and a pinch of finishing salt. Serve immediately.

  • For best results, use ripe freestone peaches as they are easier to pit and perfect for grilling.
  • Clingstone peaches can be used but may require extra effort for pitting.
