Instructions
- Prepare the Peaches: Halve and pit the peaches by cutting along the seam from stem to end, then twisting apart the halves. If the pit remains stuck, carefully cut around it with a knife and remove it with a spoon.
- Heat the Grill: Preheat a grill or grill pan over medium high heat. While heating, lightly brush the cut side of each peach half with extra virgin olive oil to prevent sticking and enhance caramelization.
- Grill the Peaches: Place the peach halves cut side down onto the grill. Cook for 4 to 5 minutes until grill marks form and the fruit softens slightly. Flip the peaches and grill the skin side for another 3 to 4 minutes.
- Plate and Serve: Remove the peaches from the grill and let them cool slightly until warm but safe to handle. Arrange on plates, top each with a scoop of vanilla ice cream, drizzle with caramel sauce, then sprinkle with chopped pistachios, minced fresh mint, and a pinch of finishing salt. Serve immediately.
