Description

Wet Ingredients

  • 1/2 cup almond butter
  • 2 tbsp honey
  • 2 tbsp molasses

Optional Coating

  • 1 cup chocolate chips
  • 1 tsp coconut oil


Instructions

  1. Mix Dry Ingredients: In a large bowl, combine the almond flour, coconut flour, ground ginger, cinnamon, and salt until evenly mixed.
  2. Mix Wet Ingredients: In a separate small bowl, stir together the almond butter, honey, and molasses until fully combined.
  3. Combine Dough: Add the wet ingredient mixture to the dry ingredients and mix thoroughly. Using your hands helps ensure the mixture is evenly combined into a dough.
  4. Chill Dough: Place the dough in the refrigerator and chill for 30 minutes to firm up before shaping.
  5. Melt Chocolate: While chilling, melt the chocolate chips with the coconut oil in the microwave in 20-second intervals, stirring between each, until smooth and fully melted. Set aside.
  6. Shape Truffles: Remove the dough from the fridge and roll into approximately 12-14 evenly sized balls.
  7. Coat in Chocolate: Dip each ball into the melted chocolate, allowing excess to drip off by tapping against the side of the bowl. Use a fork to handle the truffles if desired.
  8. Set Truffles: Place the coated truffles on a parchment-lined tray and refrigerate or freeze for at least 30 minutes to set the chocolate.
  9. Store: Store the truffles in the refrigerator or freezer until ready to serve.

  • For a nut-free version, substitute almond flour and almond butter with sunflower seed flour and sunflower seed butter.
