Instructions
- Mix Dry Ingredients: In a medium bowl, whisk together flour, Christmas spice, cacao powder, baking powder, and baking soda. Set aside.
- Combine Wet Ingredients: In a large mixing bowl, whisk together eggs, honey, melted butter, vanilla extract, sea salt, and dark rum if using.
- Add Buttermilk: Pour in the buttermilk and whisk again until well combined.
- Combine Wet and Dry: Add the dry ingredients to the wet ingredients and whisk until just mixed. It’s okay if the batter has a few lumps; avoid overmixing.
- Preheat and Oil Waffle Iron: Heat your waffle iron to medium heat, spray or brush with cooking oil.
- Cook Waffles: Spoon about ¼ cup of batter per waffle onto the waffle iron (adjust based on iron size). Cook for 3-5 minutes until golden or according to the manufacturer’s instructions.
- Keep Warm: Place cooked waffles in a preheated 200°F oven on a baking sheet in a single layer to keep crispy while finishing the rest.
