Description

These festive Christmas Waffles are a delightful treat packed with warming spices, rich cacao, and a hint of dark rum. Perfect for holiday mornings, they are easy to prepare, gluten-free, and pair wonderfully with yogurt, nut butter, or fresh berries.

Ingredients

Scale

Dry Ingredients

  • 2 cups flour (Bob’s Red Mill gluten-free 1:1 mix)
  • 1 tbsp Christmas spice (or gingerbread spice)
  • 2 tbsp cacao powder
  • 2 tsp baking powder
  • ½ tsp baking soda

Wet Ingredients

  • 2 large eggs
  • 3 tbsp honey (or maple syrup)
  • 3 tbsp melted unsalted butter
  • 2 tsp vanilla extract
  • ½ tsp sea salt
  • 1 tbsp dark rum (optional)
  • 2 cups buttermilk

Cooking

  • Cooking oil spray (avocado oil or 1 tbsp cooking oil as substitute)

Instructions

  1. Mix Dry Ingredients: In a medium bowl, whisk together flour, Christmas spice, cacao powder, baking powder, and baking soda. Set aside.
  2. Combine Wet Ingredients: In a large mixing bowl, whisk together eggs, honey, melted butter, vanilla extract, sea salt, and dark rum if using.
  3. Add Buttermilk: Pour in the buttermilk and whisk again until well combined.
  4. Combine Wet and Dry: Add the dry ingredients to the wet ingredients and whisk until just mixed. It’s okay if the batter has a few lumps; avoid overmixing.
  5. Preheat and Oil Waffle Iron: Heat your waffle iron to medium heat, spray or brush with cooking oil.
  6. Cook Waffles: Spoon about ¼ cup of batter per waffle onto the waffle iron (adjust based on iron size). Cook for 3-5 minutes until golden or according to the manufacturer’s instructions.
  7. Keep Warm: Place cooked waffles in a preheated 200°F oven on a baking sheet in a single layer to keep crispy while finishing the rest.
  8. Serve: Serve waffles with yogurt, nut butter, berries, or your favorite toppings and enjoy!

Notes

  • Use gluten-free flour to keep it suitable for gluten-sensitive diets.
  • To make vegan buttermilk, mix 2 cups of plant-based milk with 2 tbsp lemon juice or vinegar, let it sit for 5 minutes before use.
  • Dark rum is optional but adds a delightful depth of flavor.
  • Waffles are freezer-friendly; cool completely before freezing and reheat in toaster or oven.
  • Adjust cooking time depending on your waffle iron to achieve desired crispness.
