Description

Lobster and Steak

  • 2 lobster tails (5-6 ounces each)
  • 2 tablespoons fresh lemon juice
  • 2 4-ounce filet mignon steaks (room temperature)
  • 2 tablespoons olive oil (divided)
  • 2 teaspoons kosher salt
  • 1 ½ teaspoons black pepper
  • Lemon wedges (for serving)


Instructions

  1. Make Compound Butter: In a small bowl, combine the softened butter, minced shallot, garlic, and parsley using a fork. Transfer the mixture onto a sheet of wax paper or plastic wrap, shape into a 1 ½-inch thick log, roll tightly, and freeze for 10 minutes to solidify. Then refrigerate until ready to use.
  2. Preheat Oven and Prepare Baking Sheet: Preheat your oven to 375°F and place a rack in the center. Line a baking sheet with aluminum foil and spray with nonstick spray; set aside.
  3. Prepare Lobster Tails: Using kitchen shears, carefully split the top shells of the lobster tails lengthwise. Gently loosen the meat by inserting an upside-down teaspoon between the underside of the shell and the meat. Place lobster tails on the prepared baking sheet and drizzle with lemon juice. Slice a pat of compound butter in half and place the two pieces on top of each lobster tail.

  5. Sear Steaks: Heat the remaining tablespoon of olive oil in a cast iron skillet over medium-high heat. Add the steaks and sear each side for 1-2 minutes until a brown crust forms.
  6. Cook Steaks and Lobster in Oven: Transfer the skillet with steaks to the preheated oven and cook for 4-8 minutes, depending on desired doneness (125-130°F for medium-rare, 135°F for medium, 145°F for medium-well). At the same time, place the lobster tails in the oven and cook for 6-8 minutes until the lobster meat is firm and opaque.
  7. Rest Steaks: Remove the steaks from the oven and let them rest for 5 minutes to retain juices while the lobster finishes cooking.
  8. Serve: Arrange the filet mignon steaks and lobster tails on individual plates. Top each steak with a pat of compound butter and garnish with lemon wedges. Serve immediately for best flavor.
