Ribs
- 2 racks baby back ribs (about 3 to 4 pounds)
- 1 onion, sliced
- 4 cloves garlic, sliced
- 1/2 cup water
- 2 to 3 tablespoons rib rub (or homemade rib rub in the notes)
Sauce
- 1/4 cup ketchup
- 1/2 cup chili sauce
- 1/2 cup barbecue sauce (of choice)
Instructions
- Prepare the rub: If making homemade rub, combine all rub ingredients as per your preferred recipe. Remove the silver membrane from the back of the ribs to ensure tenderness. Rub the spice mixture evenly on both the front and back of the ribs.
- Load the slow cooker: Place the sliced onion, garlic, water, and the seasoned ribs into the crock pot. Make sure the ribs are arranged so they fit snugly inside.
- Cook the ribs: Cover and cook on high for 4 hours or low for 8 hours until the ribs are fork tender and easily pull apart.
- Prepare the sauce: While the ribs are cooking, combine ketchup, chili sauce, and your choice of barbecue sauce in a bowl to make the finishing glaze.
- Broil the ribs: Preheat your broiler. Brush the ribs generously with the sauce mixture. Place them under the broiler for 3 to 5 minutes, or until the sauce is caramelized and the ribs have a nice char. Watch closely to avoid burning.
- Serve: Remove ribs from the broiler carefully and let them rest for a couple of minutes before cutting into individual portions. Serve with extra sauce if desired.
Notes
- Removing the silver skin from the ribs is essential for tenderness.
- Use a homemade rib rub if you prefer a customized blend of spices.
- Broiling at the end adds a delicious caramelized char that mimics grilling.
- Leftover ribs can be refrigerated and reheated gently in the oven.
- For extra smoky flavor, add a splash of liquid smoke to the sauce mixture.
