Description

These Air Fryer Beef Taquitos feature seasoned lean ground beef and sharp cheddar cheese rolled into tortillas and air fried to a crispy, delicious finish. Perfect for a flavorful, low fat, and low calorie Mexican-inspired meal, they are great served with sour cream, salsa, guacamole, or pico de gallo for dipping.

Ingredients

Scale

Beef Mixture

  • 1 pound 90% lean ground beef
  • ½ cup diced yellow onion
  • 1 tablespoon taco seasoning mix (homemade or store bought, check for gluten-free)
  • 4 ounce can diced green chiles (drained)
  • 1½ cups grated sharp cheddar cheese

Assembly

  • 16 tortillas - fajita size flour, 6-inch corn, or 50/50 blend (corn tortillas for gluten-free option)
  • Avocado oil nonstick cooking spray (must be non-propellant)

Serving Suggestions

  • Sour cream
  • Salsa
  • Pico de gallo
  • Guacamole
  • Shredded lettuce

Instructions

  1. Prepare the beef filling: In a skillet over medium heat, cook the ground beef with diced yellow onion until the beef is browned and the onions are softened, about 5-7 minutes. Drain excess fat if necessary. Stir in taco seasoning mix and diced green chiles. Cook for 2 more minutes until well combined and fragrant. Remove from heat.
  2. Mix in cheese: Stir the grated sharp cheddar cheese into the beef mixture until evenly distributed and slightly melted from the residual heat.
  3. Assemble the taquitos: Warm the tortillas slightly to make them pliable. Spoon about 2 tablespoons of the beef and cheese mixture onto one end of each tortilla. Roll tightly and secure if needed.
  4. Prepare for air frying: Lightly spray each taquito with avocado oil nonstick cooking spray to help achieve a crispy crust.
  5. Air fry the taquitos: Place rolled taquitos seam-side down in a single layer inside the air fryer basket. Set the air fryer to 400 degrees Fahrenheit and cook for 15-20 minutes, flipping halfway through, until golden brown and crispy.
  6. Serve: Remove taquitos carefully from the air fryer and serve hot with sour cream, salsa, guacamole, pico de gallo, or shredded lettuce as desired.

Notes

  • Use corn tortillas to make this recipe gluten-free; flour tortillas add a softer texture.
  • For extra crispiness, spray taquitos lightly with avocado oil halfway through cooking as well.
  • Taco seasoning can be homemade to control sodium and additives.
  • Store leftovers in an airtight container and reheat in the air fryer for best texture.
  • Feel free to add chopped jalapeños or hot sauce to the beef mixture for extra heat.
