Ingredients
Scale
Shrimp
- 2 tablespoons unsalted butter (26 g)
- 1 pound raw shrimp, peeled and deveined (450 g)
- 1/2 teaspoon salt
- 1/2 teaspoon ground black pepper
Sauce
- 2 cloves garlic, minced
- 3/4 cup vegetable or chicken stock (180 ml)
- 1 cup heavy cream (240 ml)
- 1/2 cup grated parmesan cheese (43 g)
- 1 tablespoon chopped fresh parsley for garnish
Instructions
- Cook the Shrimp: In a skillet over medium heat, melt the butter. Add the shrimp, season with salt and pepper, and cook until the shrimp turn opaque and pink, about 2-3 minutes per side. Remove shrimp from the skillet and set aside.
- Make the Sauce: In the same skillet, add the minced garlic and sauté until fragrant, about 30 seconds. Pour in the stock and simmer gently, allowing it to reduce by half. Then add the heavy cream and cook, stirring frequently, until the sauce thickens slightly. Stir in the grated parmesan cheese until melted and the sauce is creamy.
- Combine: Return the cooked shrimp to the skillet, tossing them in the creamy sauce to coat evenly. Taste and adjust seasoning with additional salt and pepper if needed. Garnish with chopped fresh parsley.
- Serve: Serve the creamy garlic shrimp hot over your choice of rice, mashed potatoes, or polenta for a complete and delicious meal.
Notes
- Jumbo shrimp is recommended for best texture, but any size shrimp will work.
- For added depth of flavor, substitute some or all of the stock with white wine.
- Prepare side dishes ahead of time so they are ready when the shrimp is cooked.
- Always grate parmesan cheese fresh for the best taste and texture in the sauce.
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
- Reheat leftovers gently in a saucepan over low heat, adding a splash of water or stock to thin the sauce if it thickens too much.
