Description

This rich and creamy Thai-inspired Coconut Lime Fish Soup is a nourishing and flavorful dish featuring tender white fish fillets simmered in a fragrant coconut milk broth with lime, red curry, and fresh aromatics. Perfect for a comforting meal packed with protein and vibrant flavors.

Ingredients

Scale

Soup Base

  • 2 tbsp avocado oil
  • 1/2 medium-sized yellow onion, finely chopped
  • 3 cloves garlic, minced
  • 1 2-inch nub ginger, thinly sliced or minced
  • 1 (14-oz) can full-fat coconut milk
  • 2 cups chicken broth
  • 1 to 2 tbsp red curry paste (to taste)
  • 2 tsp fish sauce
  • 1 lime, zested and juiced
  • 1 cup fresh tomatoes, chopped

Fish and Garnishes

  • 10 ounces white fish fillets (cod, halibut, or tilapia)
  • Salt and pepper to taste
  • Fresh cilantro, for garnish
  • Lime wedges, for serving
  • Green onions, chopped, for garnish

Instructions

  1. Heat the oil: Heat the avocado oil in a large thick-bottomed pot such as a Dutch oven over medium heat. Add the onion and sauté, stirring occasionally, until softened, about 5 minutes.
  2. Sauté aromatics: Stir in the minced garlic and ginger and continue sautéing for about 2 to 3 minutes until fragrant and aromatic.
  3. Add liquids and simmer: Pour in the coconut milk, chicken broth, red curry paste, fish sauce, lime zest, lime juice, and chopped fresh tomatoes. Stir well, cover the pot, and bring the soup to a full boil. Immediately reduce heat to medium-low and simmer gently for 30 minutes to develop flavors.
  4. Cook the fish: Add the white fish fillets to the simmering soup and cook for an additional 10 minutes or until the fish reaches an internal temperature of 145 degrees Fahrenheit. Use a thermometer to check doneness.
  5. Prepare the fish pieces: Use tongs to transfer the cooked fish to a cutting board. Break the fillets into bite-sized pieces with a fork, then return them to the soup. Stir gently to incorporate.
  6. Serve: Ladle the soup into bowls and garnish with fresh cilantro, chopped green onions, and lime wedges. Serve immediately with crusty bread or a salad if desired.

Notes

  • This soup can be customized by adding other fresh vegetables, rice, or noodles to make it more filling.
  • Use a firm white fish like cod, halibut, or tilapia for best results.
  • Adjust the amount of red curry paste according to your spice preference.
  • Use fresh lime juice and zest for the best citrus flavor.
  • Checking the fish with a thermometer ensures perfect doneness without overcooking.
