Description

A hearty and flavorful Cheesy Ground Beef and Potatoes recipe featuring tender cubed potatoes cooked with ground beef, seasoned with Italian herbs, and topped with melted cheese. This comforting skillet dish is easy to prepare and perfect for a satisfying dinner.

Ingredients

Scale

Potato Mixture:

  • 1 tablespoon oil
  • 1 1/2 lbs potatoes (any kind), cubed
  • 1/2 medium onion, finely diced
  • 1/2 green bell pepper, finely diced

Beef Mixture:

  • 1 lb lean ground beef
  • 2 tablespoons tomato paste
  • 2 cloves garlic, minced
  • 1 1/2 teaspoons seasoning salt
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon ground mustard
  • 1/4 teaspoon black pepper
  • 1/8 teaspoon red pepper flakes

Sauce and Toppings:

  • 3/4 cup low sodium beef or chicken broth
  • 1/2 cup tomato sauce
  • 1/4 cup cream
  • 1 cup shredded mozzarella or cheddar cheese

Garnish:

  • Fresh chopped parsley or green onions

Instructions

  1. Prepare Potato Mixture: Heat oil in a large skillet over medium heat. Add the cubed potatoes and cook, stirring occasionally, until they are golden brown and slightly softened, about 10-15 minutes.
  2. Cook Vegetables and Beef: Add the diced onion, green bell pepper, and ground beef to the skillet with the potatoes. Brown the beef thoroughly, breaking it apart as it cooks. Then stir in tomato paste, minced garlic, seasoning salt, Italian seasoning, ground mustard, black pepper, and red pepper flakes.
  3. Add Sauces: Pour in the broth, tomato sauce, and cream, stirring to combine. Reduce heat to low and cover. Let the mixture simmer until the potatoes are fully tender and flavors meld, about 15-20 minutes.
  4. Melt Cheese and Serve: Sprinkle shredded cheese evenly over the top of the skillet mixture. Cover and cook for an additional 3-5 minutes until the cheese is melted. Garnish with fresh chopped parsley or green onions before serving.

Notes

  • Potatoes: Use red-skinned or Yukon gold potatoes for the best texture and flavor.
  • Cooking Tip: To speed up cooking time, pre-cook or microwave the potatoes before adding to the skillet.
  • Variations: Experiment with different meats such as ground turkey or chicken, adjust the spice level by adding more red pepper flakes, or include extra vegetables like mushrooms or zucchini for variation.
