Instructions
- Make the sugar syrup: Place the sugar and water in a small saucepan over medium heat. Warm while stirring occasionally until the sugar dissolves completely. Do not let it simmer. Remove from heat and allow the syrup to cool to room temperature.
- Prepare the blackberry puree: Wash the blackberries thoroughly. Blend them in a blender or food processor until the fruit is well broken up. Press this mixture through a fine strainer to extract as much juice and pulp as possible, discarding the seeds and solids.
- Combine and chill: Mix the strained blackberry puree with the cooled sugar syrup and lime juice. Stir well to combine. Chill the mixture in the refrigerator for at least 1 hour or up to overnight for best flavor and coldness.
- Churn the sorbet: Following your ice cream maker’s instructions, pour the chilled mixture into the ice cream maker. Churn for about 20 minutes or until the sorbet reaches a soft-scoop consistency.
- Freeze until firm: Transfer the churned sorbet to an airtight container and freeze for at least 3 hours to firm up for longer storage. Before serving, let it sit at room temperature for a few minutes to soften slightly for easier scooping.
