Instructions

  1. Prepare the baking sheet: Line a sheet pan with a silicone baking mat or parchment paper to prevent sticking and allow even baking.
  2. Mix dry ingredients: In a small bowl, whisk together the all-purpose flour, baking powder, ground or grated nutmeg, and kosher salt thoroughly to combine.
  3. Mix wet ingredients: In a separate large bowl, whisk together the applesauce, honey, vanilla extract, and egg until the mixture is smooth and well combined.
  4. Combine wet and dry: Add the dry ingredient mixture to the wet ingredients, whisking until no dry spots remain and a uniform batter forms.
  5. Add mix-ins: Using a spoon or spatula, fold in the diced apple, oats, shredded sharp cheddar cheese, and optional raisins until evenly distributed throughout the batter. The mixture will be sticky and somewhat loose.
  6. Shape cookies: Scoop 1/4 cup (about 60g) portions of the mixture and, using your hands, shape each into rounds about 3/4 inch thick, similar to forming burger patties. Arrange the cookies on the prepared sheet pan. You should form 13 cookies. Note: they will not spread during baking and can be placed close together.
  7. Bake: Place the sheet pan in the oven and bake for 18 minutes. The edges of the cookies will start to brown, and you may hear a sizzling sound. Check the bottom of a cookie to ensure visible browning. The cookies will be soft when removed but will firm up as they cool.
  8. Cool and store: Transfer the cookies to a wire rack to cool completely before eating. Store leftovers in an airtight container in the refrigerator for up to one week, or freeze for up to one month.
