Instructions
- Prepare the baking sheet: Line a sheet pan with a silicone baking mat or parchment paper to prevent sticking and allow even baking.
- Mix dry ingredients: In a small bowl, whisk together the all-purpose flour, baking powder, ground or grated nutmeg, and kosher salt thoroughly to combine.
- Mix wet ingredients: In a separate large bowl, whisk together the applesauce, honey, vanilla extract, and egg until the mixture is smooth and well combined.
- Combine wet and dry: Add the dry ingredient mixture to the wet ingredients, whisking until no dry spots remain and a uniform batter forms.
- Add mix-ins: Using a spoon or spatula, fold in the diced apple, oats, shredded sharp cheddar cheese, and optional raisins until evenly distributed throughout the batter. The mixture will be sticky and somewhat loose.
- Shape cookies: Scoop 1/4 cup (about 60g) portions of the mixture and, using your hands, shape each into rounds about 3/4 inch thick, similar to forming burger patties. Arrange the cookies on the prepared sheet pan. You should form 13 cookies. Note: they will not spread during baking and can be placed close together.
- Bake: Place the sheet pan in the oven and bake for 18 minutes. The edges of the cookies will start to brown, and you may hear a sizzling sound. Check the bottom of a cookie to ensure visible browning. The cookies will be soft when removed but will firm up as they cool.
- Cool and store: Transfer the cookies to a wire rack to cool completely before eating. Store leftovers in an airtight container in the refrigerator for up to one week, or freeze for up to one month.
